Restaurant Inspections: Evidence of Pests Found in Three Arlington Establishments

The most recent batch of restaurant inspection reports from the state Department of Health.

These Arlington restaurants were recently paid visits by the the Virginia Department of Health. Restaurants are paid periodic visits.

Insect, rodent and/or other pest harborage conditions exist on the premises. Mouse droppings observed around water heater.

Re-packaged muffins in the establishment are not labeled as specified in law.

Ready-to-eat food is not protected from cross contamination by separating it from raw animal foods. Shell eggs stored above bottled drinks in walk in.

The food-contact surface of several knives observed soiled and dirty and is not clean to sight and touch.

The person in charge did not demonstrate their knowledge of correct procedures for cleaning and sanitizing utensils and food-contact surfaces of equipment.

The food establishment was not under the immediate control of a Northern Virginia certified food manager when I arrived.

A sign or poster that notifies food employees to wash their hands is not provided at all hand washing lavatories used by food employees and/or is not clearly visible to food employees. Men's restroom hand wash sign has been removed.

Texas Bar-B-Q Factory

The entire floor is heavily soiled especially behind the cooking line, corners and edges. Mice dropping along the front floor edges, under the deep fryer and behind the cooking line.

Ready-to-eat food is not protected from cross contamination by separating it from raw animal foods. Raw chicken stored above buckets of sauce, shell eggs stored above onions and produce in walk in. Uncovered foods including meats observed in walk-in freezer.

Employees observed contacting ready-to-eat food with their bare hands.

According to the Virginia Department of Health:

"Ideally, an operation would have no critical violations, or none which are not corrected immediately and not repeated. In our experience, it is unrealistic to expect that a complex, full-service food operation can routinely avoid any violations.

"Keep in mind that any inspection report is a 'snapshot' of the day and time of the inspection. On any given day, a restaurant could have fewer or more violations than noted in the report. An inspection conducted on any given day may not be representative of the overall, long term cleanliness of an establishment."
