Matt Matros founded the restaurant in Chicago in 2009 after losing 60 pounds on a high-protein diet, according to a news release. He created the restaurants as places that could provide a balance of protein, good fat and healthy carbs, the release states.

The Protein Bar will be open from 7:30 a.m. to 8 p.m. Mondays through Fridays and 10 a.m. to 6 p.m. Saturdays.
