Cranberry Pistachio Biscotti

The secret ingredient in these cookies is extra virgin olive oil--just a touch, but enough to enhance the other ingredients: dried cranberries, pistachios, vanilla and almond flavoring. They're easy to whip together quickly, keep well and taste delicious, particularly when drizzled or dipped in melted white chocolate.
