Chipotle Soup

This soup will be a delicious treat for your March Madness party guests. The bacon and chipotle peppers make this a smoky and spicy hit!


Things have suddenly become hectic at work, home, church...everywhere. I’m exhausted. This has resulted in eating dinners of toast and cereal - NOT my usual style.

So, to help me out, my husband cooked his famous Chipotle Soup. He created this recipe after having homemade Chipotle Soup made by a former co-worker. He took out the cheese and the cream-based broth, added a couple ingredients, and created a healthier, very tasty...and very spicy soup. I love it...when he uses the peppers sparingly.

This is a great soup to serve at your final four games this week. It’s healthy, hearty and chocked full of chicken and bacon. Delicious!

Chipotle Soup (recipe by Joshua Stockstill)
Serves 8

1 lb chicken
24 oz chicken broth
1 can black beans
1 can garbanzo beans
1 can corn
1 onion
1 cup water
½ lb bacon
24 oz roasted red tomato salsa
2 tbsp adobo sauce and 2 chipotle sliced and diced (both come in the same can)
1 bay leaf
1 tsp garlic

1) Cook chicken and shred it
2) Cook bacon and chop it
3) Rinse black beans and garbanzo beans
4) Throw everything in a pot, bring to a boil, and let simmer for about 20 minutes.

Bad Breath Factor: WATCH OUT!

1) Start with a smaller amount of peppers. Chipotle peppers add a smoky/spicy taste, but it can get a little overwhelming.
2) Garbanzo Beans: these were a new add in our home this past week (we were out of corn, so we threw them in). Turned out GREAT! If you don’t like garbanzo or black beans, you can substitute any bean you’d like.
3) Top it with some cheese - it sounds strange, but shredded mozzarella is my favorite on this soup. You can also top with corn chips, too.
4) This soup seems to taste better the day after you make it. Be sure to make enough to have leftovers!
5) Watch your sodium: many of the ingredients in this list are high in sodium. If you’re watching your intake, be sure to use low sodium broth. Even then, salsa and bacon add a whole lot of salt. Be careful.

Enjoy this soup while watching the games this week! It’s still cold enough that a great bowl of soup will taste great! Just keep a glass of water nearby, you’ll be thankful!
