I'm not feeling so great today. My husband's sick, it's rainy, I'm exhausted, and this week's recipe was a dud.
Like that boyfriend from high school, it had so much potential! All the right ingredients were there. On paper, things were promising. We could have had a great future together (ok, that might have been a bit much). Instead, I was left disappointed and confused. What happened? Did I expect too much?
As we conclude this month of breakfast foods containing cinnamon, I wanted to feature a fruit dish. I thought it'd be a nice way to redeem this calorie filled month and go out with a bang. I was a little mistaken.
Spiced Peaches (found in my favorite cookbook: Better Homes and Gardens New Cookbook, Bridal Edition)
2 tsp sugar
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp grated orange peel
1 tsp fresh mint (or 2 tsp basil)
1) Peel and slice peaches
2) Mix all ingredients together and spoon into 4 smaller crocks or oven safe bowls (if desired. I'd imagine cooking this in one big bowl would be fine).
3) Bake at 350 degrees for about 15 minutes.
4) Sprinkle with mint (or basil) and serve warm.
Level of Difficulty: Easy
Cost: Roughly $4.00
Cost per Serving: Roughly $1.00
Bad Breath Factor: I brushed my teeth right after-but again, I didn’t like this.
1) Use very ripe peaches to get best flavor. And...make this in season. So, not in February.
2) Be careful peeling extra ripe peaches. They're slick and it's hard to get the skin all the way off.
3) FINELY grate the orange. Get the tinniest pieces you can.
4) I felt like the measurements for the seasoning was off. It was a little much.
5) The recipe calls for mint or basil. I chose mint, but I think basil would create a more interesting flavor.
I think what threw me the most was that it was nothing like I expected. I was expecting warm, gooey peaches with a spiced glaze.
What I got was warm peaches with a gritty coating on them. I know this recipe can be redeemed, but I'm going to wait until peaches are in season to play with it.
The other recipes from February turned out fantastic, so I don’t want anyone to think this month was a waste. We tried some healthy and crunchy , baked delicious and , and conquered
