Chocolate Mint Cookies

These are by far, the most amazing cookies I've ever made. If you could make only one cookie this holiday season-make it this one!

So...I know I shouldn't be surprised. And I know it shouldn't be a shock...but what was with this temperature drop this week?!?! One morning it's pouring rain and smells like spring, and then I leave my office that afternoon to seemingly freezing temperatures. I supposed it is December, which means it should be cold out...but come on! A little consistency would be nice. At least December does mean it's COOKIE SEASON :)! As we begin to wrap up cookie week on the Holiday Saute, I have to share some exciting news. We now have a new FAVORITE cookie. I didn't think it was possible, but it is. These chewy, delicious cookies taste great! And with candy mixed in, they are sure to be a big hit!

Hope you had a wonderful Thanksgiving, Ballston! We are now entering COOKIE WEEK in the Holiday Saute! I want to feature some of my favorite cookie recipes, and now seems to be the perfect time to do it. Expect a few of my favorites over the next week (or week and a half).  These M&M Cookies were actually  picked out by my husband a couple months ago, and we've made them a couple times since then. They taste great, and the chocolate M&Ms really make the cookie fantastic. Try dark M&Ms for a nice treat (I LOVE dark chocolate) or buy holiday colored M&Ms to make these cookies a little more festive! Since we always baked our own pumpkins in the fall, it seemed like my mother always had pumpkin seeds ready to be toasted in the oven. Sounds a little bit like a 1950's scenario, right? Not quite the case, as she is a single, working mother of three, but still-she loved pumpkins and knew how much we loved the pumpkin seeds! (Ok-or spitting the pumpkin seeds at each other...but still, we loved them!) I'm going to give you the basic "how to toast your pumpkin seeds" directions, but also we're going to try some fun and festive flavors! Pumpkins are a versatile squash, used in so much more than just pie. Now, I'm all about ease with my cooking, really.
