Since we always baked our own pumpkins in the fall, it seemed like my mother always had pumpkin seeds ready to be toasted in the oven. Sounds a little bit like a 1950's scenario, right? Not quite the case, as she is a single, working mother of three, but still-she loved pumpkins and knew how much we loved the pumpkin seeds! (Ok-or spitting the pumpkin seeds at each other...but still, we loved them!) I'm going to give you the basic "how to toast your pumpkin seeds" directions, but also we're going to try some fun and festive flavors! Most people just sprinkle salt on the seeds, which is great and delicious, but you can do so much more! This delicious, moist chicken is my favorite fall dish. It’s sure to impress, and apples mixed with the onion and chicken tastes absolutely amazing. This is a must try!

Apple Braised Chicken So much for fall being here, right? First day of my favorite season and its 90 degrees in Ballston. I would have thought it was still summer except for a glorious sight at the grocery store...PUMPKINS! Stay tuned for October where we explore the possibilities with pumpkins! This dish we're making this week is my family's favorite. It's delicious, healthy, moist, amazing...one of those "I could eat it every day" sort of recipes. You know, I never thought about switching out the ginger for cinnamon because I love the ginger in there so much, but it's worth a try. Cinnamon+apples=amazing! And the cooked apples are one of my favorite parts of this recipe. Cheese has potential, too. I bet a lot of people would love that! Thanks for the suggestions!
